White bean stew with kale
Serves 4
Vegetarian, vegan, dairy free, gluten free
Ingredients
2 (19-oz/591 ml) cans white beans, drained, rinsed & divided
1 ⅓ cups vegetable stock
2 tablespoons olive oil
4 veggie sausages, sliced into one inch pieces
1 medium shallot, small dice
¼ cup sun dried tomatoes, finely chopped
3 cloves garlic, minced
2 tablespoons nutritional yeast
½ teaspoon dried oregano
¼ teaspoon ground chillies
sea salt and ground black pepper, to taste
1 teaspoon balsamic vinegar
4 cups chopped kale

We served our stew over some of the lovely potatoes, simply boiled, we've been getting recently.
