Vegetable bake
This was inspired by a recipe in Delia’s Vegetarian Collection: her version is only potatoes & onions but I wanted to use some of the other veg in our harvest box. It makes a nice side dish but I don’t think it’s enough as a main course on its own.

365g potato
200g courgette
200g carrot
200g onion
salt
pepper
fresh rosemary, chopped
150ml milk
275ml stock
10g butter

- Chop all the veg as finely as you can.
- Grease a large baking dish, and pre-heat your oven to gas 4
- Layer the veg, rosemary, & seasoning through the dish
- Mix together the milk & stock & pour over the dish
- Sprinkle with a bit more rosemary and dot with butter
- Bake for about an hour
