This is a perfect way to preserve gluts of summer bounty, to enjoy all through the winter. It's also very easy to make :)
Makes 3 half pint jars
Vegetarian, vegan, gluten free, dairy free
2 lbs tomatoes
1 1/4 cups granulated sugar
4 tbsp lemon juice
1 tablespoon grated fresh ginger
2 teaspoons of crushed red pepper flakes
1 generous teaspoon of smoked paprika
1 teaspoon of salt
1/4 teaspoon cayenne
