Vegetarian, vegan, dairy free, gluten free
8 medium soft ripe red tomatoes
a scant 1/2 cup arborio rice
3 tbsp/45ml good olive oil
4 cloves garlic (crushed)
1 tsp sea salt
10-15 large leaves basil, torn into small pieces
fresh cracked pepper + more salt, to taste
700g potatoes (I don't remove the skin from earlies - just scrub & chop them up)
