Squash and beetroot biryani

Serves 4-6 alongside a flavoursome curry of some sort.

Vegetarian, vegan, dairy free, gluten free

Ingredients

2 onions

4 tbsp oil

60g fresh ginger

1 tsp chilli flakes

1.5kg squash

300g basmati rice

2 pinches saffron

12 green cardamom pods

8 peppercorns

4 bay leaves

1 stick cinnamon

200g beetroot
