Spinach, leek & potato soup

Ingredients

3 large leeks

3 tablespoons olive oil

2 pounds potatoes

15-ounce can white beans

4 cups vegetable broth

1 ½ cups water

1 ½ teaspoons salt, divided

6 to 8 cups spinach

1 ½ teaspoons dried oregano

1 teaspoon dried parsley

¾ teaspoon garlic powder

Chives, for garnish
