Pesto pasta with feta & a fried egg

This popped up on my Instagram feed, and looked so good we made it that night. It didn't disappoint, and is a quick and tasty mid week dinner.
Serves 1
Vegetarian possible (depending on the cheese) gluten free possible
Ingredients
For the pesto:
80g fresh basil
50g pine nuts
50g Parmesan
150ml extra virgin olive oil
2 garlic cloves
salt (to taste)
75g spaghetti
handful of feta, crumbled
1 egg
salt
olive oil
chilli flakes
Directions
Make the pesto by putting all the ingredients in a mini food processor and blitzing to the consistency you like. Add more olive oil (or a bit of water) if necessary.
In a pan, heat a small amount of oil, and crumble the feta. Add a swirl of pesto, and then the egg. Cover and fry over a low heat.
Meanwhile, cook the pasta according to the pack instructions.
Once the pasta is cooked, mix it with the remaining pesto.
To assemble, put the pesto pasta into a bowl and top with the fried egg. Sprinkle a few chilli flakes over the top. Enjoy :)
