Pea pod soup
As much as I love fresh peas, I've always wondered what to do with the pods. You could boil them to make stock, but you could also try this really quite interesting (and very tasty!) chilled soup.
For the quantities I had (below), my soup served two as an appetiser.
Recipe here: http://chocolateandzucchini.com/archives/2008/06/chilled_pea_pod_soup.php
Ingredients
434g pea pods (this was from 3 half shares - kept in the freezer)
2 cloves garlic
500ml stock
1 medium onion
1 tbsp olive oil
1 tbsp white wine vinegar (in place of the wine)
salt
nutmeg
Directions
I didn't alter the original recipe at all, so head on over to http://chocolateandzucchini.com/archives/2008/06/chilled_pea_pod_soup.php for directions. It's a very simple method but the only advice I would give is not to use an immersion blender unless you want green kitchen walls :-)
My brother (chef/owner of http://sidshanti.com/en/) also had some recommendations:
- finish the soup with some frozen peas (I imagine that this makes more servings)
- serve with some fresh mint & yoghurt
They sound great ideas to me, so whichever way you try it I hope you enjoy it!
This recipe tastes even better made with vegetables from Community Harvest Whetstone :)
