Kohlrabi fritters

Another easy weeknight dinner, with plenty of fresh herb flavours.

Serves 2

Ingredients

For the fritters:

1 small-medium kohlrabi, peeled and grated

1 small-medium potato, peeled and grated

1 small yellow onion, diced

1 1/2 tablespoons fresh dill, minced

1 1/2 tablespoons fresh parsley, minced

1 teaspoon fine sea salt

1/3 cup plain flour

1 egg, lightly beaten

oil, for frying

For the sauce:

1 cup raw cashews

2 ½ tbsp fresh lemon juice

2 tbsp olive oil

2 cloves of garlic

2 ½ tbsp fresh dill

2 ½ tbsp fresh parsley

salt and pepper, to taste

water, to thin

Directions

  1. In a large mixing bowl, combine all the ingredients for the fritters. Mix thoroughly.
  2. In a food processor, combine all the sauce ingredients. Blitz until smooth. Use water to thin to your desired consistency, and adjust seasoning to taste.
  3. Heat the oil in a large frying pan. Shape the fritter mix into 4 burger shapes.
  4. Fry on each side 3-4 minutes, until golden brown.
  5. Remove excess oil by sitting on a kitchen towel for a few minutes before serving.

We ate ours with a big side salad.
