Green bean stir fry

2 bundles of dried soba noodles
1 tbsp sesame oil
4 to 5 spring onions, finely sliced
1 red pepper
225g green beans, trimmed and chopped (I used runner beans)
1 tbsp sesame seeds, for serving
Sauce
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon miso
1 teaspoon fresh chilli, finely chopped
2 teaspoons dark brown sugar

- Make the dressing by combining all the ingredients in a cup and set aside.
- Heat the oil in a wok and add the onion and pepper. Cook, stirring occasionally, until the onion is soft.
- Add the green beans and cook for a further 5-6 minutes.
- While the beans are cooking you could cook the noodles; they usually only take about 5 minutes. Drain and set aside.
- Once the beans are soft enough to eat, add the noodles and dressing to the wok, stir, and cook for another minute or two.
- Divide between two bowls, top with sesame seeds, and dig in!
