Green bean stir fry

Serves 2

Vegetarian, vegan, dairy free

Ingredients

Noodles

2 bundles of dried soba noodles

1 tbsp sesame oil

4 to 5 spring onions, finely sliced

1 red pepper

225g green beans, trimmed and chopped (I used runner beans)

1 tbsp sesame seeds, for serving

Sauce

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon miso

1 teaspoon fresh chilli, finely chopped

2 teaspoons dark brown sugar

Directions

  1. Make the dressing by combining all the ingredients in a cup and set aside.
  2. Heat the oil in a wok and add the onion and pepper. Cook, stirring occasionally, until the onion is soft.
  3. Add the green beans and cook for a further 5-6 minutes.
  4. While the beans are cooking you could cook the noodles; they usually only take about 5 minutes. Drain and set aside.
  5. Once the beans are soft enough to eat, add the noodles and dressing to the wok, stir, and cook for another minute or two.
  6. Divide between two bowls, top with sesame seeds, and dig in!
