Gnocchi gratin with greens

Adapted from a recipe in an old Tesco magazine, I think.

Serves 4

Vegetarian (depending on cheese used)

Ingredients

1 tbsp oil

1 onion, diced

30g plain flour

425ml milk

1 tbsp dijon mustard

good grating of fresh nutmeg

200g light soft cheese

500g pack gnocchi

450g of different greens, e.g. broccoli, kale, cabbage, spinach, chard

30g Parmesan, grated

Directions

  1. Pre-heat the oven to 220C/200Cfan/gas 7.

  2. Heat the oil in a large pan and fry the onion for 5 mins until soft.

  3. Add the flour and fry for 1 min, before gradually whisking in the milk. Bring to a simmer, stirring constantly, until the sauce thickens and bubbles.

  4. Reduce the heat and stir in the mustard, nutmeg and soft cheese, then remove from the heat and set aside.

  5. Cook the gnocchi according to the pack instructions, and about a minute before they're done, add the greens to the same pan. Drain.

  6. Put the drained gnocchi & greens in a 1.5l baking dish and pour the cheese sauce over them. Sprinkle with the grated cheese and bake for 15 mins or until golden.

This recipe tastes even better made with vegetables from Community Harvest Whetstone :)
