Easy pumpkin soup

This recipe comes from ‘The Big Apple Cookbook’, from Transition Leicester.

Ingredients

1 medium pumpkin or butternut squash, peeled, deseeded and chopped

1 large onion, chopped

2 cooking apples, peeled, cored and chopped

1 tin tomatoes

1 red chilli, finely chopped, or ¼ tsp chilli powder

1 tbs paprika

1 ½ pints stock or water

Directions

  1. Cook everything together for about ½ an hour till soft.
  2. Mash or liquidize.
