Courgette slice

Serves 5 and is very nice both hot and at room temperature. Leftovers make great packed lunches.

Ingredients

2 cups grated courgette

1 cup of grated cheddar cheese

5 large eggs

1 large onion, peeled and chopped

1 cup plain flour

1 tsp baking powder

½ cup olive oil

salt and pepper

Directions

  1. Preheat oven to gas 5.
  2. Line a large bread tin.
  3. Put all the ingredients in a large bowl and mix until combined.
  4. Pour into the loaf tin.
  5. Cook for an hour, until golden brown and a toothpick comes out clean.

Notes - the original recipe cooks the loaf at 175C for 40-50mins; my oven takes far longer to cook everything!
