Courgette & lemon jam

You're probably wondering if this will taste weird, because that's exactly what I thought! I can assure you it is absolutely delicious - I think it tastes very subtle, a little like earl grey. You certainly can't tell it's made from courgettes.

Makes about four 450g jars

Vegetarian, vegan, dairy free, gluten free

Ingredients

1kg courgettes, topped and tailed, and cut into 5mm dice

1kg granulated sugar

Finely grated zest of 2 lemons

Juice of 1 lemon

3 tbsp finely shredded lemon verbena leaves (optional)

However, I don't get a firm set with this jam. I've tried less water and more lemon juice, but this made no difference. The jam is still delicious - just a very soft set.
