1 small red onion, finely chopped

1 large courgette, grated (220g)
1 small sweet potato, peeled and grated (200g)
1 small red capsicum, finely diced
2 spring onions, sliced (green only)
1/2 ball mozzarella cheese, grated
1/4 cup fresh parsley, chopped
4 eggs, lightly whisked
1/4 cup milk
1 cup self raising flour
sea salt flakes and black pepper, to taste
