Cauliflower cheese

Yep, that tasty standby!

Serves 2 as a small meal or 3-4 as a side dish

Vegetarian (depending on cheese used)

Ingredients

Small head of cauliflower (from today’s half share)

Large pinch of salt

22g butter

12g plain flour

1tsp dried thyme

177ml milk

85g grated cheddar

Vegan alternative

Ok started to work it out, but it's basically the same as your recipe for colly cheese, but replace the dairy for other things :

Small head of cauliflower

Large pinch of salt (larger than you would normally to make up for lack of cheese)

22g vegan marge / oil

12g plain flour

177ml soya / other non-dairy milk

A healthy sprinkle of Engivita (add to taste - I put loads in to make it more cheesy) - or you could use vegan cheese...

2 dollops horseradish sauce (or mustard can work)

Directions

  1. Cut the cauliflower into large florets and put into a pan of salted water.
  2. Bring to the boil and simmer for about 5 minutes, until just tender in the stalk.
  3. Meanwhile, in a separate pan, melt the butter and then add the flour and thyme. Stir to stop it sticking.
  4. Add the milk bit by bit, stirring continuously.
  5. Simmer for 2 minutes.
  6. Add the cheese and stir it in.
  7. Put the cauliflower in a serving dish and pour the sauce over the top. Serve immediately.

Variations

  • Substitute the thyme in the sauce for 1 dsp wholegrain mustard.
  • Substitute part of the cauliflower for broccoli.
