Serves 4
Vegetarian, gluten free
4 big cooking apples, cored
1 tbsp butter
50g soft brown sugar
50g raisins
30g chopped walnuts
a little freshly grated nutmeg
2 cinnamon sticks
2 whole star anise
a few cloves
Creme Fraiche
