Elspeth Campbell

Occupation:

Gardener, nurse, cleaner, cook, chauffeur, teacher, social secretary, nagger in chief: in short, full time mum.

Involvement in Transition Leicester/Community Harvest Whetstone:

I've been in the Transition Leicester Food Group since 2008; I'm involved with the cafe and the apple press, and have played a part in CHW from it's conception. I'm passionate about good food: local, organic and wholesome - with a bit of chocolate mixed in - and food security. I also feel strongly about the community aspect of the project, so work at trying to make it accessible and enjoyable for all comers, especially families with children, requests and ideas always welcome!

Favourite CHW Vegetable:

Winter salads - oh so lovely to have something so fresh and tasty in the depths of winter!

Other interests:

Wife to Keith, mother to Zoe, Jonathan and Toby, all home educated. I love gardening and cooking, and am learning Non-Violent Communication, which helps me improve the quality and depth of my connections with other people. I'm half Dutch, enjoy camping, walking and sleeping.
