Vegetable bake

This was inspired by a recipe in Delia’s Vegetarian Collection: her version is only potatoes & onions but I wanted to use some of the other veg in our harvest box. It makes a nice side dish but I don’t think it’s enough as a main course on its own.


Serves 3-4

Ingredients

365g potato
200g courgette
200g carrot
200g onion
salt
pepper
fresh rosemary, chopped
150ml milk
275ml stock
10g butter

Directions

  1. Chop all the veg as finely as you can.
  2. Grease a large baking dish, and pre-heat your oven to gas 4
  3. Layer the veg, rosemary, & seasoning through the dish
  4. Mix together the milk & stock & pour over the dish
  5. Sprinkle with a bit more rosemary and dot with butter
  6. Bake for about an hour
