Ten minute meal

I had some leftover rice. I had some vegetables. I had some eggs. I was hungry and had 30 minutes to get out the house again. My challenge? A meal from scratch made and eaten in that time. Challenge smashed!

Serves 1

Ingredients

1 tbsp sunflower oil

1 cup cooked rice (I use US measuring cups)

2 spring onions, chopped

handful of green beans, topped & tailed & chopped into thirds

medium carrot, washed & chopped

1 egg

1/2 tbsp soy sauce

The veg you use is not fixed - I used what I had to hand. Anything that goes well in a stir fry will be fine. I sometimes like to add cherry tomatoes towards the end of the cooking time.

Directions

  1. Heat the oil in a wok.
  2. Add all the veg and cook for a few minutes, stirring occasionally.
  3. Add the egg and stir for another minute or two, stirring, until the egg is cooked.
  4. Add the soy sauce, stir and cook for a further minute.
  5. Serve and enjoy!
