Salade nicoise

Serves 2-3


gluten free, dairy free, also vegetarian if you omit the anchovies (as we did)

Ingredients

2 eggs
500g broad bean pods, or 50g french beans
4 ripe tomatoes
¼ cucumber
2 spring onions
½ red pepper
50g small black olives
1 tbsp capers
A few basil leaves

For the dressing
1 small garlic clove
1 pinch coarse salt
1 small handful basil leaves, torn
4 tbsp extra-virgin olive oil
½ tbsp red-wine vinegar
Ground black pepper

It was a time-consuming recipe to make, so you might wish to adapt the recipe to make it quicker.

This recipe tastes even better made with vegetables from Community Harvest Whetstone :)
