Root vegetable hash
Serves 2 as a light dinner.

300g sweet potato, peeled & diced
500g swede/parsnip, peeled and diced
4-6 tbsp olive oil
2 spring onions, chopped
2 eggs
1 tbsp chia seeds

- Heat the oil over a low heat in a large pan. Add the swede/parsnip and fry for 5 mins.
- Add the sweet potato and fry for a further 20-25 mins, until the veg are tender and a bit crispy around the edges.
- Add the chia seeds and spring onion to the pan.
- Heat a separate pan with a small amount of oil and fry your eggs according to preference.
- Divide the root veg between two plates. Top with the egg. Tuck in!
