Quick winter vegetable soup

A great way to use lots of the veg in your box in one go! Of course you can vary the veg, or even add some pulses like barley or lentils to taste.

Serves 4-6


1 parsnip
4-5 carrots
4-5 potatoes
1 leek
a few cloves of garlic
1 - 11/2 pints stock
knob of butter
salt & pepper


  1. Scrub/peel/trim/chop the vegetables roughly
  2. In a large pan, heat the butter and then fry the leek and garlic on a low heat for 5 mins or so
  3. Add all the other veg and stock, season, bring to the boil and simmer for 20 mins or until the veg are soft
  4. Blend until smooth
  5. Adjust seasoning to taste
  6. Enjoy!
