Pumpkin and millet burgers

The quantities below made 14 patties.

Ingredients

800g piece pumpkin (we used the 2 small pumpkins from the harvest just before Halloween)

olive oil, sea salt & black pepper

2 cups cooked millet, cooled

1 large egg

3 cloves garlic, finely chopped

1/4 cup porridge oats

2 tablespoons cornflour

2 good big handfuls of parsley, chopped

Directions

Essentially you oven-roast the pumpkin, mix everything together, and shallow fry the burgers.

We ate ours with chilli jam and broccoli, which was very tasty. We felt that the burgers had a nice, mild, nutty flavour, but would easily stand a bit of spice, such as paprika/red pepper.
