Pumpkin and apple soup

This recipe was shared by Elspeth in the Growers' sheet for 3/11/17

She says it's great for parties, and very easy to make.

Vegetarian, vegan, dairy free, gluten free

Ingredients

1kg pumpkin, peeled, deseeded and chopped
1 onion, chopped
2 cooking apples, peeled, cored and chopped
1 tin of tomatoes
1 red chilli (optional)
1 tbs paprika
2 pints of stock or water

Directions

  1. Put all the ingredients in a large saucepan and cook for about half an hour (until soft).
  2. Mash or liquidise into a smooth soup.

This recipe tastes even better made with vegetables from Community Harvest Whetstone :)
