Pea, courgette & mint soup
Serves 6
The recipe seems to have come from a Waitrose magazine, but I’ve no idea of the date. I’ve adapted it somewhat.

1 tbsp olive oil
I onion, chopped
500g courgettes, chopped
300g frozen petit pois
1 litre stock
10g fresh mint (leaves only)
2.5 tbsp creme fraiche (6 tbsp single cream is in the original recipe)
freshly ground black pepper

- Heat the oil and fry the onion until soft.
- Add the courgette and stir well. Leave to cook for a few minutes.
- Add the peas, pepper, and stock, bring to the boil, and simmer for 5 minutes.
- Turn off the heat and add the mint and creme fraiche and stir.
- Blend until smooth, return to the saucepan and season to taste if necessary. You may also wish to heat the soup through to serve. Enjoy!
