Kale one pot spaghetti

Serves 2
A super quick midweek meal, which would go nicely with a green salad.

Vegetarian (depending on the cheese used), could be vegan/dairy free if cheese omitted.

Ingredients

200g spaghetti
200g tomatoes, roughly chopped
the zest of 1 large lemon
50ml olive oil
1 teaspoon salt
500ml boiling water
200g  kale, ribs removed and roughly chopped
Parmesan cheese, grated, for serving

Directions

Simply, you put everything apart from the kale and cheese in a wide pan and cook for 6 minutes. Then you add the kale and cook for a couple more minutes. You need to stir frequently to stop the pasta sticking.
