Kale and mushroom lasagne

Ingredients

300g kale, stalks removed & leaves shredded

salt & pepper

30g butter

500g mushrooms, sliced

2 cloves garlic, chopped

1 tsp thyme

200g lasagne sheets

20g Parmesan

For the bechamel:

1 litre milk

1 bay leaf

1 onion, peeled & chopped

a few black peppercorns

75g butter

75g plain flour

2 tsp mustard
