Hearty soup

The basic way I make all my soups is the way handed down from my mother. I just tweak them as I see fit.

Serves 4-6


Adjust quantities to your liking.
1 onion, chopped
A few cloves of garlic, chopped
A couple of carrots, chopped
Tomatoes, chopped
A couple of medium potatoes, chopped
A couple of handfuls of red lentils
A pint of stock
Sunflower oil
Salt & pepper


  1. Fry the onion and garlic until soft.
  2. Add the carrots and fry for a couple more minutes.
  3. Add the tomatoes. Cover the pan and let it steam on a low heat for about 5-10 minutes.
  4. Add the potatoes, stock, lentils and seasoning and simmer for about 15 minutes.
  5. In a food processor, blend the mixture until smooth. Return to a low heat and adjust seasoning as necessary. Enjoy!
