Harissa cauliflower & lentils

Serves 4

vegetarian, vegan, gluten free, dairy free


2 tbsp olive oil
1 onion, diced
1 cauliflower (approx 600g) cut into florets
180g lentils
1 tbsp harissa paste
1 tin chopped tomatoes
500ml stock
salt, to taste


  1. Heat the oil over a low heat and fry the onion for about 5 mins.
  2. Add the cauliflower & continue to fry gently for about 5 mins.
  3. Add the lentils, harissa, tomatoes and stock and bring to the boil. Turn the heat down and simmer for 20-25mins, until the lentils are soft. Season to taste.
  4. Serve with grains (e.g. rice) of your choice.
