Green bean chutney

This recipe was shared on the growers' sheet from 3rd August 2018. It's from Elspeth's friend Lisa.

Quantities can be reduced proportionally.

vegetarian, vegan, gluten free, dairy free

Ingredients

4 lb French or runner beans

3 lb onions

2 - 3 pints cider vinegar

1 3/4 lb sugar

2 - 3 oz raisins

3 oz cornflour

2 tsp mustard powder

1 oz turmeric powder

salt

Directions

  1. Top & tail the beans, string if necessary, and slice.
  2. Steam the beans for a few minutes.
  3. Put all the ingredients in a large saucepan and cook until thickened and soft enough to blend or mash a little.
  4. Decant into sterilised jars and leave in a dark cupboard for a few months for the flavours to develop.
