Cucumber sorbet

I have a guilty admission to make: I don't get excited by the arrival of cucumbers in the harvest box. There, I said it! I don't dislike them; I just can't get excited by them. Until this recipe. This recipe turns those humble cucumbers into a thing of beauty, that I could happily eat from the container with a spoon. It's ultimately refreshing, and also a great palate-cleanser if you're eating spicy foods. If you only do one thing with your cucumbers this year, make it this.

Ingredients

2 cucumbers, peeled, halved and deseeded

25g bunch of mint, leaves picked and roughly torn

Juice of 2 medium lemons

125g sugar

50ml Pimm's
