Cucumber salad

This recipe was passed verbally to me by a client.

One cucumber will serve at least 4 people as a side.

Ingredients

Cucumber
Salt
Plain yoghurt
Mustard

Directions

  1. Peel & grate the cucumber. Place it in a sieve over a bowl and salt it reasonably generously. Leave for 10 mins or so.
  2. Meanwhile, mix together some yoghurt and mustard to make your dressing. You'll need to taste as you add the mustard to make it to your preference.
  3. After 10 minutes or so, squeeze the cucumber. A lot of liquid will already have dripped down into the bowl, but try to get as much as possible more out.
  4. In a bowl, combine the cucumber and dressing. If you're not serving immediately pop into the fridge to keep cold.

Here's a variation suggested by Anna:
Thinly slice the cucumber. Add a little sprinkle of sugar.
