Courgette chocolate cake

Makes 35 brownie-sized squares.

A great way to sneak veg into reluctant children’s diets!

My variations were:

  • I used butter, not margarine.
  • I only had 400g courgettes, so that’s what I used.
  • I didn’t have cocoa powder, so I used some fancy Montezuma’s Real Chocolate for Drinking that’s been languishing in the back of the cupboard since a few Christmases ago! This is why my cake has a speckled effect instead of looking like chocolate cake.
  • I used a food processor until the point of folding in the flour; this I did by hand.
  • My batter didn’t need any milk to achieve dropping consistency.
  • In my gas oven the tray bake took over an hour to cook; the instructions said 35 mins!
