Courgette bread

This recipe was passed to me by a colleague, who had asked for the recipe from a B&B in the US while on a recent trip.

vegetarian, dairy free

Ingredients

3 eggs, beaten

200ml vegetable oil

250g granulated sugar

250g grated courgette with skin

3 tsp vanilla extract

75g chopped walnuts (optional)

375g sifted flour

1 tsp bicarbonate soda

1 tsp salt

3 tsp cinnamon

1/2 tsp baking powder

Directions

  1. Beat eggs. Add oil, sugar, courgette and vanilla.
  2. Mix in dry ingredients and nuts.
  3. Bake in greased and floured 9x5x2 bread pans or smaller at 325F/gas 3 for 90 mins (toothpick should come out clean).
