Caramelised onion and butter pasta

This recipe was shared in the Growers' Sheet from 1st December 2017. It's cited as being slightly adapted from The Guardian Online.

Serves 2

vegetarian (depending on the cheese used)


1 tbsp olive oil
1 onion, finely sliced
pinch salt
150g pasta
a generous knob of butter
50g hard goat's cheese, grated


  1. Heat the oil over a low heat, then add the onion and salt. Stir, and cook until the onions are golden-brown in colour. This will take about 30 minutes.
  2. When the onion is ready, cook the pasta according to your taste. Drain and return to the pan with the butter, cooked onion, and half the cheese. Toss well. Divide between two bowls and serve topped with the remainder of the cheese.
