Broccoli & orzo bowl

The Italians know a thing or two about food: namely that if it's top quality and fresh then little needs to be done to it to make a wonderful meal. That was the ethos I tried to embrace with this meal, and with the veg in the harvest freshly picked/cut/pulled up on a Saturday morning it couldn't get any fresher!

Serves 2

Vegetarian (depending on the cheese used)

Ingredients

150g orzo pasta

2 tbsp chilli-infused olive oil

3 cloves garlic, chopped

150g purple sprouting broccoli

2-3 tbsp grated Parmesan

Directions

  1. Cook the pasta according to the pack instructions.
  2. In a large pan, heat the oil and then gently fry the garlic for a minute or two.
  3. Add the broccoli and stir to coat in oil, then cook for a few minutes until it begins to soften.
  4. Add the cooked & drained pasta to the frying pan and mix to combine all ingredients.
  5. Divide between your serving bowls and top with Parmesan.
  6. Eat immediately!
