Asian-inspired courgette noodles

Naturally Ella is fast becoming one of my favourite food blogs. The recipes have great flavour combinations and, more importantly, are always reliable.

Serves 4

vegetarian, dairy free, gluten free (depending on the noodles purchased)


300g soba noodles
1 large courgette (450g)
1 medium red onion (140g)
1 small yellow pepper (100g)
2 tbsps sunflower oil
120ml soy sauce
2 tbsps honey
4 cloves garlic
1-2 inch piece of ginger
4 tbsps water

I completely forgot the sesame seeds for the top!


I didn't alter anything from the original recipe, so head on over to for directions!

Alterations you might wish to make:
  • A different noodle to courgette ratio: I could easily have had more courgette in each serving (just as well with our summer glut!).
  • Tweaks to the sauce: you may prefer less garlic, or more or less honey or soy sauce. The brand of soy sauce you use will also make a difference (we use Kikkoman, which is naturally fermented).
