Baked apples

Adapted from Miss Dahl’s Voluptuous Delights, HarperCollins 2009

Serves 4

Ingredients

4 big cooking apples, cored
1 tbsp butter
50g soft brown sugar
50g raisins
30g chopped walnuts
a little freshly grated nutmeg
2 cinnamon sticks
2 whole star anise
a few cloves
Creme Fraiche

Directions

  1. Preheat the oven to gas 4/180C
  2. Combine the butter, sugar, raisins, walnuts and nutmeg
  3. Stuff this mixture into the centres of the apples
  4. Place the apples into a baking dish and scatter the cinnamon, star anise and cloves around them. Add a few cms of water to the baking dish so the apples are sitting in it
  5. Bake for 40 mins or so until the apples have partly exploded
  6. Serve immediately with creme fraiche and enjoy!

This recipe tastes even better made with vegetables from Community Harvest Whetstone :)
